Also known as St. Peter’s fish, John Dory has a highly unusual appearance, with its flat, oval body, an expandable, tube-like mouth, and a spiky dorsal fin. Whilst growing up to 2ft in length and weighing up to 7lbs, this breed inhabits the world’s warmer waters, including the Eastern Atlantic, Western Pacific and Indian Oceans.

Being one of the most highly prized fish, John Dory is a firm favourite amongst chefs. With it sweet, but delicately mild taste, this white-fleshed fish can be cooked in a variety of ways. Whether you choose to lightly fry, grill, poach, steam or sauté your fillets, you get to enjoy its array of health benefits. It’s low fat and high protein content makes it a delicious dieting alternative. If you’re a fan of Sole and Turbot, you will definitely enjoy the delicacy that is John Dory!

Our products are predominantly sourced in UK waters by UK vessels. We have strong connections in Shetland, Scrabster, Peterhead, Brixham & Newlyn. We also source some of our sustainable white fish from well-managed fisheries in Iceland and Norway. We only supply fresh fish in the truest sense of the word to ensure our seafood takes pride of place on every single plate.
