Nephrops Norvegicus

With their blushed pinky-red shell, Langoustines are a relative of lobster and are native to the cooler Northern Atlantic and North Sea. These slight shellfish are hugely important to the Scottish fishing industry, with its west coast providing more than half of the 60,000 tonnes of Langoustines that are eaten around the world.

More commonly referred to as ‘Scampi’, Langoustines are certainly a luxury. Since trawlers can only fish for them at dusk, dawn or during the night when they emerge from their seabed burrows to search of food, their nocturnal nature means they are highly-prized.

This rare, high-valued shellfish turns even the simplest of dishes into a fine-dining experience. Not only are they delicious when roasted and served with lemon, herbs and mayonnaise, but their mild, sweet flavour is also divine when add to a curry, pasta or paella, or even a salad with a vinegar dressing.
