Lobster belongs to the crustacean family, but of the two different species, Maine Lobsters are found on the Atlantic coast of North America and are renowned for their claws, whereas Rock Lobsters are found in the warmer Mediterranean and Caribbean waters, and have long antennae instead. Due to their contrasting climates, meat from a Maine Lobster is much sweeter than that of Rock Lobsters, because the cold water keeps the meat from absorbing the salt water.

As many people know, Lobster is one of the most expensive fish dishes. The best way to enjoy this delicacy would be to cook it simply: either grilled, baked, boiled or steamed, and served with a butter sauce and lemon juice. For the more adventurous, lobster can be used in a risotto or a classic Lobster Thermidor.

Our products are predominantly sourced in UK waters by UK vessels. We have strong connections in Shetland, Scrabster, Peterhead, Brixham & Newlyn. We also source some of our sustainable white fish from well-managed fisheries in Iceland and Norway. We only supply fresh fish in the truest sense of the word to ensure our seafood takes pride of place on every single plate.
